Cilantro And Lime Chicken Tacos

Everyone should own a slow cooker. And actually use it! It’s so relaxing to throw a bunch of ingredients in a crock pot and know that once you come back from work, dinner will already be ready. If you work from home, smelling the food cook all day is just as relaxing and maybe even more so since you can smell how good it’s going to taste.

I love trying new slow cooker recipes. This one for Cilantro and Lime Chicken Tacos I adapted from Pip and Ebby. On their blog, they write, “I  have never eaten such tender chicken in my life! I was pretty much able to shred it by just looking at it. And the flavor? Mmmmm, the flavor.”

They’re right. I promise. This is quickly becoming one of my favorite recipes.

SONY DSCCilantro Lime Chicken Tacos

Makes six soft or hard shell tacos

What You’ll Need

  • 5 boneless chicken tenders
  • 12-ounces of salsa
  • 2 tablespoons of lime
  • 1/4 cup cilantro, chopped
  • One 1.25-ounce package taco seasoning
  • 1 jalapeno pepper, chopped
  • 6 hard or soft tacos shells
  • 1/2 cup lettuce chopped
  • 1/2 cup of shredded cheddar cheese
  • 1/2 cup of diced tomatoes
  • Any other taco additions you want

What To Do

Place the chicken tenders at the bottom of the slow cooker. Add the salsa,lime, cilantro, taco seasoning and jalapeno pepper. Cover and cook on low for seven hours.

SONY DSCDice up the chicken and place in a bowl. Place the lettuce, cheddar cheese, tomatoes in separate bowls. Serve with the taco shells and you have make your own chicken tacos.
