Shocking, brave, self-determined words spoken on the morning of September 16, 1810 by Father Miguel Hidalgo began the Mexican War of Independence. Known as El Grito de Dolores, in his speech, Padre Hidalgo announced his intention to fight the Spanish government and invited all those listening to join him. While it took more than 10 years for the people of Mexico to win their independence, September 16 still marks Mexican Independence Day, a day of celebration.

In Mexico, the day is celebrated with parades, music, and of course, plenty of food. In the spirit of those festivities and in honor of the brave words that sparked Mexico’s independence it seems only fitting to honor the day with culinary dishes that speak to Mexico’s heritage.
